im pretty happy to be back settled in SF after bouncing around between Tahoe, Hollywood, Roseville, and San Diego for the last month of holiday shenanigans. and theres nothing like a massive bowl of phở with all the fixins on a cold San Franciscan day to celebrate!

Reading this article from LA Timesfood Chefs Ferran Adriá, Juan Mari Arzak and José Andrés on ‘the future of food’ i had to stop and re-read Adriá’s statement: “In life, we separate the cowards from the non-cowards…those who want to live experiences cannot be cowards” and think to myself how very true it is. In regards to all aspects of life. What an apparent but undeniable idea.
i also like chef Andrés defending avant-garde cuisine with: “When I hear we do strange things, I don’t get it. For me, it’s more strange to have a ham and cheese sandwich with Coke.”

Pahnl used a combination of light with stencils and long exposure photography that took over 300 hours to make, using over 200 stencils.
